If you can add 25% of air to a gallon of ice cream, that makes it 1.25 gallons of ice cream. What makes up for its creamy consistency is the high temperature and air. Air allows for soft serve machines to use not much ingredients.
These machines are cool as well as its features. These machines are self-contained units that store mix, churn, and freeze it into soft ice cream, and then dispense it. Some have LED displays that allow you to set your preferred time and monitor the consistency of the product. Once done, this soft serve machine will adapt to the mix found in it. The machine has a low mix light which will tell you when to refill the mix hopper. Some models possess audible signal that tells when to add more mix.
A great soft serve machine will have a safety feature that will protect you from any compressor burnout. This mechanism allows the compressor to shut down if you don’t detect the low-mix alarm within few minutes. The compressor goes in a cycle for every 10 minutes to keep the ice cream cold. Another important function is sealing off the compressor from hot refrigerant gas to avoid the ice cream to freeze as a solid.
When choosing soft serve machines, the capacity must be ensured depending on the desired volume of ice cream to be produced in every setting. You can measure the capacity of this machine in volume. The high volume can make up to 7 servings while the medium volume can serve up to 4-5 servings and the low volume can take care of 2-3 servings.
As to energy consumption, soft serve machines with small capacity generally use up 115 volts while the larger ones consume 208-230 volts.
Once the mix has turned into soft ice cream, it is now ready to be served in a cone or bowl. Soft serve ice cream can go with root beer or banana split for a refreshing dessert. You can have any flavor you have for soft ice cream as you walk under the summer heat. Enjoy eating.

i´m having trouble with my recipe for light ice cream?
I make and sell low fat, no sugar fruit Ice Cream.
I´ve been having the problem that the ice cream turns into a "rock" after being in the freezer for a cuppla days, even if the freezer has the correct temperature for ice cream. At this temperature, my "normal" ice cream is good, but light ice cream turns into a rock. I´ve been told the problem is the low amount of solids in the mixture. I was advised to use polydextrose (10% of the recipe) and maltodextrine (7% of the mixture). I still have the problem. I use splenda to sweeten the ice cream.
Any suggestions? What´s the best recipe for light ice cream?

Answer:
The 1st thing that popped in my head was a trial run of time. You haven't mentioned if you tried this but here goes: What if you put the ice cream in at different temps and/or time frames? You know, for 30 40 mins to see the stage of the ice cream (Hard, semi hard or not at all). Maybe that could be part of the issue. Now, with the temp, What if it needs a diff temp b/c it is different then conventional ice cream? Those are two options to work with. One other suggestion would be to go to a gorcery store and look for that type of ice cream or the closest thing to it and check their temps. I use to work at one and in the frozen food dept. All the temps for the most part were smiliar, however, there we seperating doors. Good luck.
